Parker's is like a little heaven, Sydney's original art store, if you have a little money to splash around...
The Art Scene at West Ryde is truly fantastic with everything you could possibly need...
Eckersleys are generally pretty rude (but not as bad as Oxford), but they do have quite a bit of stuff (especially St Leonards).
Then there's places like Reverse Garbage at Marrickville - this place has all kinds of junk that is useful for model-making.
And here are a range of books that might be useful - it's the reading list for my model-making elective this semester:
James Angus, James Angus, Sydney: MCA, 2006.
James Angus, Mikala Dwyer, Emily Floyd, Ronnie Van Hout, Ricky Swallow, Still Life: The Inaugural Balnaves Foundation Sculpture Project, Sydney: AGNSW, 2003.

AND if you're really keen, which you ought to be, then go to S:\Resources\samples\Arch\BENV2315 Architectural Model Making – Ainslie
on the FBE server - look at IMAGE LIBRARY for lots of photos of interesting models - you're bound to find some inspiration in there!
